Lunch Ideas for Work

Saving money can be tricky. One thing that I tell my employees time and time again is to save your money, you will be thankful when you are older. One easy solution to saving money is packing your lunch instead of eating out. Packing lunch can take extra time but is worth it since eating out is costly, especially when you do it everyday for lunch. There are plenty of quick and easy solutions when it comes to packing your lunch. Whether you prefer meal prepping on Sunday or making an additional food portion for the next day when you’re making dinner, check out some of my favorite recipes to bring for lunch.

Shrimp and Rice

When I pack lunch for work, I like to try and make sure I’m packing a balanced meal. It’s not always perfect, but I usually like to include a protein, veggie, and carb. The cauliflower rice and shrimp dish I’ve been making has been great for summer because it is light and filling. I cook cauliflower rice from Trader Joes with pineapple to add some flavor. In a separate pan, I cook broccoli with shrimp and add salt and pepper. Combine everything together, and you have an easy and tasty meal. With this recipe it’s easy to make just enough for dinner or add in a little extra of everything, stick it in a Tupperware, and have lunch for the next day!

Warm Chipotle Lime Potato Salad

This recipe is very easy and delicious. I will usually meal prep this on Sunday and bring it by Wednesday at the latest for lunch. It gives you a heavy dose of veggies for the day without being heavy. Pair this meal with rice and it’s perfectly filling. If you are not great at making rice (it took me so long to get it right with the help of Matt), Trader Joe’s has a great packet of three frozen rice options that only need three minutes in the microwave.

Chicken Tikka Masala

This dish is a little heavier for lunch in the summer but it’s still one of my favorites. I will make this for dinner for my family and bring the leftovers to work the next day. I usually meal prep a very basic chicken on Sunday and have it throughout the week so I can save time on additional cooking. Use the meal prepped chicken, make fresh rice, and add this Tikka Masala Sauce from Whole Foods on top and have a delicious yet quick meal!
